It sometimes occurs to me that it’s very strange that chocolate is so under estimated in so many ways, after all almost everybody’s happy to see chocolate in one form or the other, and it is one of the oldest kind of foods known to mankind, but still any regard chocolate as a very simple food, definitely not something to be categorized under gourmet or high cuisine.

Chocolate has been around for many centuries, it is known that the Maya and Aztec civilizations have used chocolate food and beverages, while it is true that the use of chocolate in ancient times was not similar to use that we have for today, it was very much regarded like a specialty food, food that had a lot of respect associated to it.

I’m not saying that people are on the role does not respect chocolate, in my few years living in Belgium I have learned that people who make chocolates earned a great deal of respect and even admiration from local culture. In fact many countries in Europe pride themselves on having very fine chocolate, and a lots of culture related stories and facts that are tied to chocolate. If you travel around Europe will be surprised to hear that the Swiss are just as proud as the Belgians for the quality of their chocolate, the Germans have a very proud chocolate tradition, and the French no thing or two about making chocolate as well.
